Guest Speaker - Elvith Santoyo-McNaught of Acapulco Mexican Restaurant

Biography: I’m a native of Mexico, born in 1987. My family and I immigrated to the United States in the winter of 1993. We first resided in Monmouth, Illinois and in 2000 we moved to Galesburg. I begin attending Churchill Junior high where I achieved the George Washington Gale Scholarship my 8th-grade year. I later graduated from GHS in 2006. After high school, I began serving tables for my father at Acapulco Restaurant as we celebrated its grand opening that same year. While working full time for my father I attended Carl Sandburg Community College for two years and advanced to Knox College, graduating in 2012 with a major in Economics and a minor in Business Psychology.

Immediately after graduating Knox College I bought the family business from my father and have managed to increasingly advance the restaurant, doubling in sales, employment, donations, popularity, etc.
